I just saw a you tube video where someone freeze dried 3 large mason jars of rice and then put them into his HR freeze dryer to vacuum seal.
I have a VacMaster VP215 chamber vacuum, but it would not hold that many jars all at once. Can the Blue Alpine be used in this way?

Yep you can do that with the BA machine. You would just have to run the pump from the manual hardware control page. you would also want to put a board or plate or something in the bottom of the chamber to make sure it can have a flat bottom for the jars to sit on.

I have taken jars down to 100 mBar but I did some calculations early on in doing this and any less than 60mBar can risk catastrophic failure of the jar. Id have to look up my notes to see exactly what the number was
