Anyone Freeze Drying bulk rice and beans

We have been freeze drying dried rice we got from Sam's. Two different kinds. Jasmine and white. We searched the internet and all the videos cooked the rice which didn't make any sense to add water (and time) and then turn around and take it back out with the freeze drying process. 6 cups on a tray and 5 trays for 30 cups a batch. We get around a pint of water out of a batch. We freeze it in the freezer first and then run from quick settings bypassing the freeze cycle for 12 hours. We were surprised to get that much water out of a bag of dried rice and beans. It wouldn't last 25 years with that much water in it. If anyone else has experience in drying rice and beans please let us know what you have learned. Never met anyone who couldn't teach me something.

I was starting to do rice and my thinking on cooking it was that it would make the final preparation much faster. The key I guess would be if the rice turns out better than minute rice.

Thanks for your reply. I don't see how cooking it would make it faster. It seems to me that adding more water just takes more time and energy to remove it by freeze drying, not to mention the time involved in cooking. Not tat I am an expert or anything. We have done quite a bit of rice and beans. When we cook it we just add water or broth or what ever we are using to taste and consistency. We don't do all the weighing either. Thanks again for your response. Most of it goes for long term storage. What we have cooked was just testing to make sure it turned out.
